Receta burrito de la manana

Desayuno in Sonora means flour tortillas, eggs that came off the pan seconds ago, and something with heat before 8am. This burrito is the morning we're from.. and the salsa macha is what wakes it up.
What you need (makes 4 burritos)
- 4 large flour tortillas.. sobaqueras if you can find them, burrito-size if not
- 6 eggs
- 2 medium potatoes, small dice
- 1/2 cup queso fresco or shredded quesadilla cheese
- 1/4 white onion, chopped
- 2 tbsp oil
- Salt
- Salsa Macha.. the jar that makes this a Chiltepin Sonora burrito
How it goes
- Start the papas: oil in a pan, medium heat, diced potatoes, pinch of salt. Let them get golden and crispy, 10 to 12 minutes. Stir sometimes, not always.. crispy needs patience.
- Add the onion for the last 3 minutes.
- Beat the eggs with a pinch of salt. Push the papas to one side, pour the eggs in, scramble soft. Fold everything together and kill the heat.. the eggs finish on their own.
- Warm the tortillas until they're soft and floppy. A dry pan, 20 seconds a side.
- Build: eggs and papas down the middle, cheese on top so it melts into everything.
- Now the move.. a full spoon of Salsa Macha dragged across the filling. The oil soaks in, the crunch stays, the chiltepin heat shows up in layers.
- Fold the bottom up, sides in, roll it tight. Optional pro move: 30 seconds seam-side down on the hot pan to seal it.
Coffee in one hand, burrito in the other. Ya amaneció. De la mata a tu mesa.. desde temprano.
